1. Irish Colcannon Cakes with Cheese

Ingredients:

  • 2 cups mashed potatoes

  • 1 cup finely chopped cooked cabbage or kale

  • ½ cup shredded Irish cheddar

  • 1 egg, beaten

  • ½ cup flour

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Butter or oil for frying

Instructions:

  1. Mix mashed potatoes, cabbage, cheese, egg, flour, salt, and pepper in a bowl.

  2. Form into small patties and refrigerate for 15 minutes to firm up.

  3. Heat butter or oil in a skillet over medium heat. Fry patties for 3-4 minutes per side until golden brown.

2. Guinness Honey Glazed Carrots

Ingredients:

  • 1 lb baby carrots

  • ½ cup Guinness stout

  • 2 tablespoons honey

  • 2 tablespoons butter

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Instructions:

  1. In a saucepan, combine Guinness, honey, butter, salt, and pepper over medium heat.

  2. Add carrots and cook, stirring occasionally, until they become tender and the glaze thickens (about 12-15 minutes).

3. Irish Brown Bread with Honey Butter

This traditional Irish brown bread is hearty and pairs perfectly with honey butter for a sweet-savory touch.

Ingredients:

  • 2 cups whole wheat flour

  • 1 cup all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1¾ cups buttermilk

For Honey Butter:

  • ½ cup softened butter

  • 2 tablespoons honey

Instructions:

  1. Preheat oven to 400°F. Grease a loaf pan.

  2. In a bowl, whisk together flours, baking soda, and salt.

  3. Stir in buttermilk until a sticky dough forms.

  4. Transfer to the loaf pan and bake for 35-40 minutes until golden brown.

  5. Mix softened butter and honey together, then spread on warm bread.


4. Baileys Irish Cream Rice Pudding

A rich and creamy dessert with a hint of Baileys, perfect for St. Patrick’s Day.

Ingredients:

  • ¾ cup Arborio rice

  • 3 cups whole milk

  • ½ cup heavy cream

  • ¼ cup sugar

  • 1 teaspoon vanilla extract

  • ¼ cup Baileys Irish Cream

  • Cinnamon for garnish

Instructions:

  1. In a saucepan, combine rice, milk, and sugar over medium heat.

  2. Simmer, stirring occasionally, until the rice is tender and the mixture thickens (about 25-30 minutes).

  3. Stir in heavy cream, vanilla, and Baileys. Cook for another 2 minutes.

5. Dublin Coddle (One-Pot Irish Sausage Stew)

A comforting and easy Irish dish featuring sausages, bacon, and potatoes.

Ingredients:

  • 4 Irish sausages (or bratwurst)

  • 4 slices thick-cut bacon, chopped

  • 1 large onion, sliced

  • 3 medium potatoes, peeled and sliced

  • 2 cups chicken broth

  • ½ teaspoon black pepper

  • ¼ teaspoon dried thyme

Instructions:

  1. In a large pot, brown sausages until golden, then set aside.
